Ok, you are looking at the minimash recipe. We don't have the equipment
to mash anything that requires enzyme conversion.

In addition, because of the oats and wheat we can use a grain bag... we
have to actually lauter and at least batch sparge the grains.

Alas, the yeast we have would probably not do too well here; it is more
a Saison yeast (peppery, spicy, clovey) and not a Wit spice (fruity,
clovey).

They turn into something reminiscent of oatmeal.

A pale what beer is a fine idea, but you probably want to look around
more for something that doesn't require we build something in which to
minimash (no point, I want to start full mashing soon enough it makes no
sense, but not before I get other things in order).
