<br>tl;dr: The Irish moss is definitely a huge [k]help. But it's tasty-tasty otherwise :) I used a full pound of molasses this time (over 33% of the fermentables), and while it's evident, it's not too rough. However, I'm not sure I'd go much further, at least with a pale ale.<br>

Greetings, all,<br><br>Tonight I'm brewing another stovetop batch using some amber DME and molasses. Of note: I discovered that I am somehow missing my Irish Moss, but I'm not sweating it, because a cursory search seems to indicate that it's not strictly necessary, just helpful. I shall consider it an opportunity to experiment and report on how the clarity turns out.<br>
