<p>So we had talked about brewing Sundayish, and I'm hoping that holds, but we have a hurricane potentially bearing down on us. I guess we'll see :)</p>
<p>Also, I'd like to let the saison condition some more, but I will be gone over Labor Day weekend, so brewing a wedding beer definitely is out of consideration for that weekend.</p>
<p>So basically we could let them go for a solid 6 weeks like last time, or we could bottle this weekend. One disadvantage to the former is that we have only brewed 50% of the beer; we still have both batches of ESB and the second porter. So we have 3 batches to brew in the next 4 weeks. </p>
<p>I imagine the ESB will tolerate less time in the fermenter. So we do have some leeway, just not as much as I had initially allowed for.</p>
